Lemon Cake

Cakes are my gilty pleasure! When I want to relax always the power of making a cake is the solution! Today was a rainy day here in Athens so I felt that the weather inspired me to make a cake but this time a little different..I searched into the internet to find a recipe for a lemon cake but I know myself (I never follow the recipes because I want to create my own recipe..Big pastry chef #not)..Hope to try this when you have a chilly day and I recommend it with hot coffee or tea!

Ingredients :
150 g self - rising flour
125 g butter
1 cup of caster sugar
1 cup of milk
2 eggs
1 lemon ( juice from 1/5 & zest )
1 teaspoon baking powder
2 vanillas

STEPS
1. Beat the butter with the sugar in a mixers bowl, until the mixture turns
white and fluffy.
2. Add the eggs, one at a time.
3. Then add the lemon juice, the zest and the milk.
4. Sift the flour and baking powder. Add them to the mixture in small batches.
5. When all of the ingredients have been gently folded into the batter, transfer to the cake pan.
6. Bake for 20-25 minutes.
7. Decorate it and Bonne appetite!
